Zaahh was created by Bakers and Nutritionists to make pizza night both delicious and guilt-free.  Our organic sourdough is fermented overnight to make our dough flavorful and highly digestible. 


Einkorn = The Real Paleo

Einkorn is an ancient form of wheat and is widely considered the healthiest grain. Einkorn has never been hybridized, so it has fewer chromosomes - which makes it genetically simpler and therefore easier to digest the grains and protein network (ie gluten). Many gluten-sensitive people find they tolerate einkorn well. We proudly use 100% einkorn in our dough.


Sourdough 101 

Sourdough is a mixture of water and flour that houses a relationship between wild yeasts (Saccharmoyces) and several bacterial species (Lactobacili). As these wild yeasts eat natural starches present in flour, carbon dioxide is created which leavens the bread. This process facilitates an acidic environment where good bacteria flourish and harmful microbes can no longer survive. Additionally, Lactobacilli in fermentation are responsible for breaking down phytates or antinutrients in the flours. Phytates are an evolutionary trait that all grains possess, they are essentially a chemical barrier that inhibits digestion to ensure reproduction. Considering, humans don’t possess the enzyme phytase which breaks down phytates, unfermented breads can pose a threat to our immune systems. This is particularly evident in those compromised by chronic illness or disease. Lastly, studies have shown that sourdough lowers the glycemic index of white flours as opposed to breads with conventional yeast.
















Take and Bake

Simply preheat the oven to 475 / 500 degrees and cook for 5-10 minutes depending on how crispy you prefer. All Zaah's a partially baked for easy cooking!
